Note: A very nice garnet color with a warm, almost brownish, tone.

 

Aroma: 5.5 (of 7)

Note: Sweet aroma's of currants, jam and oak, with just a hint of vanilla.

 

Taste: 9 (of 10)

Note: I really enjoyed the fruity plum and jam flavor that combines with softer vanilla, smoke and oak to create a really interesting and unique Merlot. This is probably the best wine I've tasted from Dalton and I'm happy to see a higher concentration of flavor and body than I've seen before. The wine is dry with medium tannins that are soft and subtle. A definite improvement and a welcome addition to the list of recommended wines.

Food: I enjoyed this Merlot with soft taco's. The fruitiness of the wine was a good compliment to the spice of the taco meat and salsa. I tend to match wines with spices, sauces or flavorings in the food, but this is a good example of the power of contrast. You might think a Syrah would be a good choice to match the spicyness of the meal but the fruit in this Dalton Merlot was a good contrast. It's just a different way of thinking about pairing wine with food.
